Almadraba Wild Bluefin Tuna, Preserves and Salt-Cured Fish
The bluefin tuna caught in our Almadraba traps on the coast of Cádiz are caught sustainably and selectively.
This process takes place between late April and early June, when the tuna achieves its best quality. All our tuna are wild, without further fattening. Throughout the rest of the year, we maintain their freshness by deep-freezing at -60°C and using artisanal ronqueo (quartering) techniques, always guaranteeing an excellent product.
